Potatoes, roast. Oven 230*C (210*C fan-forced), pan with
5mm peanut oil in oven; peel potatoes, boil 30min until
friable on the outside, drain, put in hot oil, cook on top shelf of
oven for about 90min until crisp (baste every 20min).
